Cashews have been a life changing ingredient in my kitchen. Cashews are a real magic ingredient in my kitchen. This healthy nut filled with minerals, vitamins and good fats, turns into a cheese, cream, milk, creamy sauce (sweet or savory), vegan parmesan…. It’s so versatile that I think everyone should have a (big) bag of cashews in theit pantry!
Soaking the cashews before using them is a good thing to do. It makes them easier to digest, as it breaks down the enzymes in them. That way the absobtion of nutrients is much higher than without soaking. Cashews just a 4 hours is enough soaking time but feel free to soak them overnight when easier.
In these photos, I served the sauce on top of a nourishing bowl of smoky shiitake mushrooms, rice, quick pickled red onions, tomato, cilantro, and avocado. This creamy sauce is so good that you’ll want to pour it on everything!
- 1 cup cashews soaked
- 1/2-1 cup water
- 1 tbsp lime zest
- 4 tbsp lime juice
- 1/2 cup cilantro
- 2-4 tbsp nutritional yeast optional
- salt to taste
Blend all the ingredients together for a creamy sauce!
Serve with for example on veggie bowl, tacos, or on a burrito!
